History
The Laboratory of Food Microbiology and Hygiene, as an independent administrative, educational, and research unit of the Department of Agriculture at the Aristotle University of Thessaloniki (AUTH), was established in 1990 (Presidential Decree 144, Government Gazette 55, 10/4/1990). Initially, located in the Dairy Science Building. Since 2008 located in the Food Science and Technology Building, at the University Farm in Thermi.
The research activities of the Laboratory are carried out in its facilities located in the Food Science and Technology Building, at the University Farm in Thermi.
The laboratory’s research activities are organized around two main pillars.
- Food Safety and Quality Management focuses on data collection using next-generation sensors, predicting microbial behavior at the molecular level, and applying machine learning algorithms to predict and control pathogenic microorganisms in food products. This pillar also includes the development of stochastic risk assessment models to support scenario analysis and decision-making based on defined safety levels.
- Utilizing Microbes and Bioactive Compounds for Food Safety and Quality addresses the role of microorganisms and bioactive compounds in contributing to the Zero Hunger (SDG 2) goal, with an emphasis on food security and nutrition. Research activities include the exploration of fermented foods as sources of multifunctional and bioprotective microorganisms, as well as the investigation of the effects of microorganisms and bioactive compounds on cell lines.
The members of the Laboratory participate in various research projects funded by the General Secretariat for Research and Technology, the Ministry of Rural Development and Food, the European Union, as well as several public and private organizations, and collaborate with other European and international institutions.
